CULINARY ARTS I

Grades 11, 12
2 hour block              2.0 credit / year

Prerequisite:   None
Recommended:   2 years English, Math and Science

COURSE DESCRIPTION:  Culinary Arts I is designed to provide students with the basic knowledge and skills to be successful in the culinary and hospitality industry.   The student will learn basic food preparation and service.  Students will participate in the operation of the Creuse Connection applying the basic skills learned in the classroom.  Students will learn basic food preparation and service in the following areas:
Food Service Equipment Use & Care, Food & Menu Terminology, Baking Terminology, Measuring & Portion Control, Grill & Fry Work, Sandwich Prep, The Recipe & Its Use, Salads & Dressings, Soup Terminology, Meats, Poultry, & Fish, Table Service / Waiter / Waitress, Cashier Training, Safety, Sanitation & Hygiene, Computer Applications, Employability Skills

EXTERNSHIP (co-op) ELIGIBLE PROGRAM

COURSE OBJECTIVE: To train students to succeed in the Culinary Arts and hospitality industry while blending academics with practical learning.

STUDENT OUTCOME:  To learn proper work habits including teamwork, flexibility, speed, timeliness and pride in working within the food service industry.  Students take the habits learned in this program to gain recognition and advancement in the culinary or hospitality career.

CERTIFICATIONS:   Pankow's 2-year CTE Skills Certificate upon successful completion of program

CULINARY ARTS II
Course number 931
Grade 12
2 hour block                2.0 credit / year

Prerequisite:  Successful completion of Culinary Arts I
Recommended:   2 years English, Math and Science

COURSE DESCRIPTION: Culinary Arts II continues the Culinary Arts I program in the operation of the Cruse Connection and by providing students with additional instruction in sharpening their culinary and service skills.  Students in this program take a leadership position in the class assisting in the early training of new students.  Opportunities will be provided to enter culinary competition, participate in apprenticeship programs and other industry related experiences.  Students will build a portfolio designed to help them pursue further education and career opportunities in the food and hospitality industry. 

EXTERNSHIP (co-op) ELIGIBLE PROGRAM

COURSE OBJECTIVE:  To train students for the hospitality industry while blending academics and practical learning.  This is done with the use of our fully equipped commercial kitchen and our 90 seat Creuse Connection Restaurant.

STUDENT OUTCOME:  To learn proper work habits including teamwork, flexibility, speed, timeliness and pride in working within the food service industry.  Students take habits learned in this program to gain recognition and advancement in the culinary or hospitality career.
